Interesting concept. And that's some good looking steam! Hard to tell from the pic, but is it translucent to whatever is behind it? As far as the droplets go, change the particle sprite to a teardrop as soon as it falls from the polygon. And maybe even rotate it according to it's velocity (for the ones shown bottom right). Are you going to be changing the temperature of different polygons for gameplay or something?
